English Cake

A classic cake! I usually do it on Christmas but I had a birthday party so I decided to do an English Cake! :-)





Ingredients:

6 Eggs
250 Grams of sugar
200 Grams of butter
400 Grams of flour
1 teaspoon of yeast
1 Teaspoon of cinnamon
1 Teaspoon of lemon zest
70 Grams of walnuts
100 Grams of glaced fruit



Preparation:

On a recipient, put the butter with the sugar and mix very well. 




Add 2 yolks and keep mixing. Put the lemon zest, the cinnamon and 2 more yolks.


Put the other yolks and mix everything again. Whip the whites until they are rigid and add to the previous mixture with the flour (by turns).





Finally, add  yeast, the walnuts and the glaced fruit and mix very well.  Put the mixture on a baking pan ( I used a rectangular one) and take it to a pre heated oven at 180 celsius degrees (356ยบ Fahrenheit) for 1 hour.
